You all have been asking for my dinner recipes, so I decided to put together a blog with all the great recipes that I have been cooking lately. So here we are! I would love to see your creations on Instagram. Remember to tag me!

vegan stuffed sweet potatoes
calories: 390.2 | carbs: 43.5 g | fat: 19.5 g | protein: 15.3 g
- 2 medium sweet potatoes, scrubbed clean
- 1 tbsp. extra-virgin olive oil
- 1 pack of lentil pouch mix
- greek yogurt
- vegan cheese
directions:
- cut sweet potatoes in half long ways and coat lightly with olive oil. roast in the oven face down at 400 degrees for 45 minutes or until tender.
- cook lentil pack as instructed. pour over the top of the potatoes.
- top with greek yogurt and vegan cheese

butternut squash soup
calories: 358 | carbs: 38 g | fat: 23.6 g | protein: 4.8 g
- 2 tbsp. of extra-virgin olive oil
- 1 large onion chopped
- 1 butternut squash, peeled, seeded and cubed
- 3 cups vegetable broth
- seasonings
directions:
- cook onion down in olive oil
- add squash and cook for 8-10 minutes
- add seasonings as desired then add 3 cups of broth and simmer for 20-30 minutes
- let cool slightly and pour into a blender to get soup nice and smooth
- add cinnamon and salt and serve with crunch bread

black lentil dal
calories: 160 | carbs: 21 g | fat: 7 g | protein: 5 g
- 2 cooked and cubed sweet potatoes
- 1 pack of maya kaimal everyday dal
- greek yogurt
directions:
- cook dal pack as directed
- add in cooked sweet potatoes
- top with sour cream if desired

vegan quesadillas
calories: 370 | carbs: 50 g | fat: 8 g | protein: 13 g
- quesadillas
- sweet potato
- corn
- black beans
- sour cream
directions:
- cook and chop sweet potatoes
- combine with the corn, black beans, and preferred seasonings
- spoon onto a tortilla and sear on the stove till browned on all sides
- serve with sour cream

impossible meatball sandwhich
calories: 634 | carbs: 69 g | fat: 24 g | protein: 38 g
- 1 pack of impossible meatballs
- 1 jar of vodka sauce
- pepper jack cheese
- sandwich bread of choice
directions:
- sear meatballs on the stove until warmed through
- add vodka sauce and simmer for 20 minutes
- top with pepper jack cheese
- serve on bread of choice
